As soon as we said goodbye to our families after Laney's party, and after Laney tested her Hello Kitty bike out in the kitchen for almost thirty minutes, we got to work on our annual creation of Resurrection cookies. My sister started making these several years ago, and now I love doing it with all three of my littles and share with them why Easter means so so much to us.
We started off with baggies of nuts that we crushed to remember that Jesus was beaten and abused for us.
We added a little salt to remind of us of the tears of Christ's followers during his crucifixion and a bit of vinegar in remembrance of the soldiers giving Jesus soured wine when he asked them for a drink.
Then we added eggs to symbolize the new life that we can find in Him. And finally some sugar because of the sweetness of Jesus's love for each of us.
We dolloped our mixture on our cookie sheets to form little "tombs" and sealed them in the oven.
In the morning we took them out of the oven with the expectation that they would be empty in the middle just like Christ's tomb was empty on the morning of His resurrection!! However, I must not have beat our mixture long enough, because they were not quite hollow. I did a little construction work on them, so the kids at least got the idea!!! I will get it right one of these years!!!

What a great idea - we always do the resurrection eggs but have never made cookies like this.
